INGREDIENTS FOR THE VERDE SALSA
- 1 tablespoon fresh parsley
- 1 cup fresh basil
- 1 tablespoon extra-virgin olive oil
- 2 teaspoon capers
- 1 tablespoon lemon juice
- 2 fillets of anchovies
- 1 garlic clove
- salt kosher
IN HONOR OF THE KEBABS
- 1 (12-oz.) fresh gnocchi package
- Cherry tomatoes, 2 pt.
- 2 tiny red onions, sliced into 2-inch chunks
- two tablespoons of extra-virgin olive oil
- salt kosher
- black pepper, freshly ground
DIRECTIONS
Make the salsa verde: In a food processor, add parsley, basil, oil, capers, lemon juice, anchovies, and garlic. Refrigerate until ready to serve, then season with salt to taste.
Make the kebabs: Preheat the grill to medium-high for 3 minutes, then soak the skewers in a shallow pan of water for 10 minutes to prevent burning. Toss gnocchi, tomatoes, onions, and oil in a large mixing basin until evenly covered. Season with salt and pepper, then thread the gnocchi, tomatoes, and onions onto the moistened skewers.
Grill the kebabs for 7 to 8 minutes, turning halfway through, until the tomatoes are blistered, and the gnocchi is browned.
2. Kebabs of Buffalo Cauliflower
INGREDIENTS
- 1/2 cup (1 stick) melted butter
- 1/2 cup hot vinegary sauce
- 1 cauliflower head, florets only
- 4 celery stalks, cut into 12″ sections
- 1 big yellow bell pepper, peeled and sliced into 12″ pieces
- 1 big orange bell pepper, peeled and cut into 12″ chunks
- salt kosher
- black pepper, freshly ground
- Blue cheese dressing, to be served
Step 1:
In a large mixing bowl, combine the butter and spicy sauce. Season the cauliflower, celery, and bell peppers with salt and pepper, and toss to coat.
Step 2:
Preheat the grill to medium-high for 3 minutes, then soak the skewers for 10 minutes in a shallow pan filled with water to avoid burning. Thread the wet skewers with the cauliflower, celery, and bell peppers. Keep the remaining spicy sauce in the bowl.
Step 3:
Place the kebabs on the grill for 3 minutes, rotating halfway through. Brush the skewers with the buffalo mixture after the first 3 minutes. Cook for 3–4 more or until the cauliflower is soft and slightly browned.
Step 4:
Serve the kebabs on a plate with the blue cheese dressing.
